Vegan Turkey and Pumpkin Chili

Ingredients:

  • Vegetarian Plus Vegan Whole Turkey, cubed
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 medium sweet yellow pepper, chopped
  • 3 garlic cloves, minced
  • 1 can (15 ounce) black beans, rinsed and drained
  • 1 can (15 ounce) pure pumpkin puree
  • 1 can (15 ounce) diced tomatoes, not drained
  • 3 cups vegetable broth
  • 2 teaspoons dried parsley flakes
  • 2 teaspoons chili powder
  • 1-1/2 teaspoon cumin powder
  • 1-1/2 teaspoon dried oregano
  • avocado, cubed
  • green onions, thinly sliced

Directions:

  1.  Remove Vegan Whole Turkey from package and defrost. Cut into cubes.
  2.  In a large skillet, heat oil over medium-high heat. Add onion and pepper; cook and stir until tender. Add garlic; cook 1 minute longer.
  3.  Transfer to a large pot and stir in remaining ingredients. Simmer for 30 minutes.
  4.  Top with avocado and green onions. Serve warm.
